Perfect Dairy-Free Creamer

Whether you are a coffee lover or love a creamy latte. This recipe is a must try. It is deliciously creamy and flavour filled.

Making your creamer at home is simple and only requires 4 ingredients and less than 10 minutes after soaking the nuts. Not to mention anytime we make something from whole foods it is packed with nutrient density.

Almonds are my favourite nut to use for this recipe. Cashew and macadamia nuts both make delicious milks but as a creamer to be used with coffee and lattes I do find the flavour of the almonds to be my preference.

Why use raw nuts?

I recommend using raw nots for this recipe. Two main reasons the flavour is delicious and roasting can affect the nutrient content.

Nuts are high in monounsaturated and polyunsaturated fats. These fats are heat sensitive, as is the case with roasting. When polyunsaturated fats are exposed to heat, they’re more likely to become damaged or oxidized. Oxidization can lead to the formation of harmful free radicals, which can damage cells within the body. It is also responsible for the “off” taste and smell in some nuts.

Some antioxidants degrade during roasting. Antioxidants are important because they help protect your cells against damage from free radicals. Also, Vitamin E and carotenoids are lost during the roasting process.

There seems to be variation between types of nuts and loss of nutrients. As well as temperature and roasting time. There are studies that show that when nuts are roasted at a low-to-medium temperature, their fats are less likely to go rancid. My conclusion is to buy raw and roast them yourself or just use raw!

Why soak the nuts?

It’s important to soak some nuts and seeds to soften them. It also helps to break down the skin or outer shell which will reduce the phytic acid and make it easier to digest. How do we do this?

To make the creamer you need 1 cup of soaked nuts added to a high powered blender. Then add 1 cup filtered water, 1 pitted medjool date and a pinch of sea salt. Blend for 45-60 sec. Then strain through a nut milk bag (or cheese cloth or clean dish towel). You can play with the flavour by adding vanilla extract, cinnamon or any other dreamy spices that call to you! You will want to store in a clean air tight jar in the fridge. I often use two smaller jars.

Enjoy in a hot or iced drink such as coffee, matcha or spiced tea!

Perfect Dairy-Free Creamer

This is a delicious, creamy, flavour filled creamer that is great for hot and cold beverages like coffee, match and spiced tea!

Ingredients

  • 1 cup almonds, soaked
  • 2 cup filtered water
  • 1 medjool date, pitted
  • pinch of sea salt

Instructions

  1. Soak almonds over night in a covered container in the fridge.
  2. Drain and rinse almonds and place in a high speed blender.
  3. Add in water, date and pinch of sea salt.
  4. Blend for 45-60 secs or until smooth and creamy.
  5. Place nut bag over a large bowl. Pour liquid through the nut milk bag. Secure the top and squeeze until all the liquid is extracted.
  6. Store in a clean airtight container for up to 4-5 days.
