Salad Rolls

I am always looking for meals that I can trick my kids and really my husband and myself into eating more vegetables; especially raw ones. Why raw vegetables? Well when we cook vegetables we destroy their enzymes, some of the phytochemical and vitamins. Soooo I do try to serve raw veg more often than not.

Those of you who are new to following me I am also a fan of choose your own adventure meals. I don’t like to encourage power struggles over food; for many reason not only is exhausting but I really want to encourage our kids to have a healthy relationship with food. This is NOT a place I want them to learn to exert control. Lastly, I am not into being a short order cook. If there is an option for choose your own adventure count us in.

 

Have fun with the toppings! These ones were inspired from what we had in our garden with a few in season fillers; but the toppings are endless. I like to balance some crunch with the other topping. The dipping sauce I made was a twist of a traditional peanut sauce using almond butter instead of peanut butter, because I am gluten free I used the Braggs soy sauce; but tamari or a coconut amnios works great as well.

Another great idea for these rolls is a fun fruit roll. We haven’t given it a go yet. But I think layering a variety of fruit and having a fun dipping sauce would be a great dessert idea!!
