Fruit Ice Cream

I scream! You scream! We all scream for ICE CREAM!

This recipe is made simple ingredients. There is room to play around and have fun with the ingredients and flavours. When my son and I came up with this recipe it was a lot of a scoop of this maybe one more. The recipe is. little different each time we make it. It is a great recipe to pour into popsicle moulds too.

To make this dairy free I like best to replace the yoghurt with the thick creamy part of the can of coconut milk. I also find the sweetness from the frozen fruit enough for me so I do love to use an avocado over a banana for the cream thickening!

In the video that we made today though we did use full fat (5% or higher) greek yoghurt.

This recipe is a place to have fun and experiment with different flavours and ingredients. While the fruit you can change up and you can add other punches of flavour the rest you do need. Avocado or banana is a must. Yoghurt or that thick part of the can of coconut cream too. Mild of your choosing you can choose coconut, almond, oat or chocolate but you do need it to help thin and smooth the mixture. The moment you have been waiting for….

Place 2 cups of frozen fruit into high powered blender, add 1 avocado or banana to add creaminess. Then add 1/2 yoghurt or thick part of coconut milk then add about 1 cup of milk of your choosing. You may have to add a little more if too thick. Blend until smooth and serve right away!
